Feel Good Fridays – Without the Bread

On Wednesday, we discussed the “not so great” things about bread, and why there are always plenty of other alternatives to bread!

Today, we wanted to pass along a recipe from Brenda Watson – this is a fantastic breakfast idea, and you can use the cabbage or lettuce leaves instead of bread to make a scrumptious breakfast burrito!

EGG & GRAIN-FREE BREAKFAST BURRITO

INGREDIENTS:

1/2 Tablespoon Coconut Oil
1/2 Onion (Peeled & Chopped)
1 Cup Organic Zucchini (Sliced)
3 Cups Organic Spinach Leaves (Washed Well & Chopped)
1 Pound Organic Ground Turkey
1 Teaspoon Dried Oregano
1 Teaspoon Cumin
1/4 Cup Fresh Cilantro (Chopped)
1/2 Teaspoon Celtic Sea Salt
1/4 Teaspoon Herbamare or Dulsa (Optional Instead of Pepper)

8 Cabbage Leaves (Whole Leaves & Washed)

DIRECTIONS:

1. Saute the onion in the coconut oil over medium heat until soft and translucent, about 5-8 minutes.

2. Add the zucchini, ground meat, spinach, oregano and cumin. Cook, stirring occasionally to break up the meat, until the meat is cooked through. Add the sale and Herbamare to taste.

3. Garnish with fresh cilantro if you have it on hand. Enjoy in a steamed cabbage leaf or raw lettuce leaf to make a burrito.

**TIP: Prepare steamed cabbage leave ahead of time so that this is quick and easy!**
